Recipe for "Pizza Norma' Ciabatta Pizza:

All You need to make a 'Pizza Norma' Sicilian Style Pizza. Remember to choose a good Ciabatta. 
Good Firm Cheese like slices of Emmantal, Fresh Spinach, Sliced Aubergine, a good Pizza Sauce that can be freshly made or a good Tomato Puree, I like to use Dried Garlic Granules but A Fresh Couple of Cloves of Garlic is just as good. 

Ingredients

Fresh Ciabatta (Cut into 4 Squares)
Emmantal Cheese,
Spinach 
Olive Oil (Or other Good Oil like Hemp) 
Tomato Puree 
Garlic
Greaseproof Paper for Use Grilling 

Cut the Ciabatta into 4 horizontally and vertically through the middle.

Spread the Tomato Puree with the Garlic on the Bread facing up,

Add the Emmantal (Make sure it dont stick to the grill when the Spinach goes on.

Add Fresh leafs of Fresh Spinach a little or a lot.  

Drizzle with Olive or Hemp oil,

Add cooked Aubergine on top of the prepared Spinach.

Drizzle some more Oil on,

Preheat the Grill (Preferably a George Foreman or Sandwich Toaster),

Put Greaseproof paper over the Ciabatta Pizza when heated,

and Grill,

turn the Pizza halfway through cooking.

Serve with a Beer or Coca Cola.

This Pizza is used to celebrate family members coming to visit. this Recipe is good with Cold Smoked Salmon instead of the Aubergine (Melazzane).
